Saturated Fat increases blood cholesterol
An informal review of observational studies posted on the Whole Health Source, by
Stephan Guyenet states a hypothesis with the points. The first one is that Dietary saturated fat
increases blood cholesterol, the second one, that elevated blood cholesterol increases the risk of
having a heart attack, and the third one, that, therefore, dietary saturated fat increases the risk of
having a heart attack.
To evaluate the second statement, investigators have examined the relationship between
blood cholesterol and heart attack risk, as shown in this graph:
