Project Proposal For: Commercial Lease of On- Premise Food Service Outlets in the
University Center Food Court.
1) Statement of Customers Need
University Dining Services (UDS), requires experienced food service operators for lease of
space from July 1, 2006 to terminate on June 30, 2009. Service should suffice enough to
attract from the campus population of close to 29,000. There should be a friendly
completion with other contractors and the UDS traditional offerings.
2) Assumptions
After accepting the contract the franchiser will assume one of the current spaces. Any
remolding is to be done at the occupier’s expense. The operator must adhere to to the
current service schedule prescribed in section 3.1.5. Beverage rights will be retained by
UDS. Contractor will provide accurate-timely financial data to UD, will coordinate menu
and use of university branding her in. All state and local foodservice codes are to be
followed with high rankings.
3) Project Scope
The applicant plans to bring French Bistro concept, Bistros Rapides de Franais. This is a
light fair concept composed for soup, salad and province inspired entrees. This will offer
diners a unique option to what is currently on campus. Upon knowledge of space contactor
will provide accurate list of needed improvements as prescribed in 3.2.1 and any additional
equipment. There will be a specific manager to be the point of contact for UDS. Corporate
supervision will be available upon request not to be less than 3 visits per week. Succeed
