Introduction
Ancient grain relatives are making a comeback in the diets of modern humans. One grain,
Triticum turanicum, known commonly as Kamut or Khorasan wheat, is one of those grains
(Sacks 2005). Kamut is a new grain in North America grown primarily in harsh climates, but is
believed to come from the Upper Nile area of Egypt (Quinn 1999). It has been stated the real
history of Kamut is elusive, but has been kept alive as an obscure grain in Egypt and Asia Minor
(Quinn 1999). Kamut is a drier wheat, with high nutritional value, and is hypoallergenic (Sacks
