ASSESSMENT INSTRUCTIONS
This assessment consists of 2 Parts.
Part A requires the development of procedures for the recruitment process
Part B requires the development of an induction program
To demonstrate competence each PART must be answered by the student.
If more space is required for any answer then student can attach a separate page containing
their name, assessment date, unit title unit code and the assessment task number and attach this
page with the current assessment task before submission.
When you have completed all the required tasks check your work before submitting.
Please note once the assessor has marked your work they will provide you with feedback. If you
are required to resubmit any task/s then you must complete those task/s by adding more
information.

PART A Planning the recruitment and selection process
Following a restructure of the Food and Beverage services provided by the Ocean Breeze Hotel,
an audit has identified that there is a shortage of staff to deliver the quality of service expected
from an operation at this level. As a result, in your position as the Human Resources Manager, you
are requiredto recruit, select and induct staff for three additional new food and beverage
positions in consultation with relevant colleagues like the Food and Beverage Manager, the Head
Chef and the Hotel Manager. You have already obtained approval for recruitment as per your
organisational recruitment policies from the head office in relation to these positions.
The 3 positions are as follows:
a. Chef de Partie Room Service Kitchen, 11.00pm 7.30am night shift (full-time position)
b. Room Service Attendant, breakfast shift (casual position 2 days per weekend)
c. Restaurant Manager, breakfast shift (part-time position 20 hours per week)
In order to get recruitment processes organised you are required to develop the following
documentation and processes:
1. Establish the job descriptions for each position based on feedback from colleagues in each
department and develop a set of selection criteria for each position which must include
expected levels of experience and the customer service attitude required to work at

Job Description for Chef de Partie Room Service Kitchen
Post Chef de Partie Fulltime position
Location Ocean Breeze Hotel Room Service Kitchen
Role Work in night shifts from 2300 hours to 0730 hours and provide for quick, consistent and quality service to
room service orders. Lead a small team of kitchen staff as well as manage, train and mentor the team and must have
a discerning eye for servicing the “odd hour” room service customer.
Reporting Structure This position reports to the Executive Chef. All room service kitchen staff report to this
position.
Detailed Description
Must be willing to work in night shifts and have experience in working in night shifts.
Responsible for the overnight operations of the kitchen
Ordering of stocks required while keeping in mind the menu for the day, control of stock levels and business
levels.
Must be aware of all hygiene standards
Candidate Profile Desired
Diploma in Hospitality (Commercial Cookery)
Minimum of 5 years experience, post of apprenticeship
Previous experience in night shift
Well groomed and personal presentation
High level of personal fitness
Job Description for Room Service attendant
Post Room Service attendant casual position
Location Ocean Breeze Hotel Main Kitchen
Role This is a casual position and needs to work in morning shifts from 0400 hours to 1100 hours. This position will
serve breakfast to room guests in the hotel during the weekends only. The candidate should be able to communicate
with the guests in a polite and professional manner.
Reporting Structure This position reports to the Head Room service. No one reports to this position.
Detailed Description
Must be willing to work in early morning shifts
Casual Position only
Responsible for prompt guest service
Must be able to walk and or stand for long hours
Must be able to push heavy carts from kitchen service bay to rooms
Must take guest’s approval before entering room and serve the breakfast.
Must set the table for the guest, open platter and identify each portion to the guest
