Bar Concept
MIAMI BOURBON
For my first establishment, my customers I will be focusing on will be those that go to
Wood Tavern in Wynwood and places in Brickell such as American Social and Blackbird.
The age range I’m looking out is 25-35 year olds. It will be 21 years and over, no cover
charge, and a dress code will be enforced as in the form of no tank tops or athletic wear.
The interest would be that of vintage yet with an artsy feel. Rustic but not Speakeasy type
feel either. My customers’ interests are to drink, listen to live music, being able to sit and
talk and just hang out. Some are still college students, others fresh in their careers. They
like art, the southern country look and they do not drink Coronas and Bud light. Dark
beers, Guinness and Heineken are more their forte. The range of income will be from
middle to upper class. As in, the drinks and atmosphere will suit that of a young business
professional but as well for a college student or recent graduate.
My staff will be of experience and the number one attribute I would look for would be
hospitality. They can be experience greatly as a bartender or server but if they lack the
hospitality skills I request, then they wouldn’t be part of my staff. If they have the
personality and charisma I’m looking for but lack the experience, in that situation they
would still be hire and traded accordingly. I would want educated employees who can
carry a conversation with my customers. The ideal Employee wouldn’t just be working for
me but with me. They would feel a sense of ownership to my bar, meaning they will treat it
as if it was their own bar. They would have pride in working at Miami Bourbon, no matter
what they’re position is. Also my staff will believe in teamwork and know to help each
other when needed to make sure the establishment runs smoothly and the customers are
enjoying their experience.
The concept for my proposed bar will be one of a vintage, sophisticated yet homey,
southern feel. Since this is my first bar, I want to start with something on the smaller end. I
want it to resemble a nice bar from the southern states like Tennessee. Wood tones, wood
