1. Recipe Quantification
The process of enlarging recipes with lower yields to adjust to meet the
production requirements of bigger function. Quantifying recipes, or it is
called scaling , is when a recipe is made with a different proportion of
ingredients to account for a different number of people than the recipe
feeds.
2. Menu Costing
refer to an economic term used to describe the cost incurred by firms in
order to change their prices. How expensive it is to change prices depends
on the type of firm.
