How Should Apples Be Prepared For A Fruit Salad?
Catechol found in plants was exposed to oxygen to produce 1,2 benzoquinone in a catecholase
oxidase catalyzed reaction. The purpose of the experiment was to use 1,2-benzoquinone
absorption of light to determine how apples should be prepared for a fruit salad. Oxidation of
catechol to 1,2-benzoquinone was used to examine browning of apples. The rate of absorbance at
540 nm was measured in a reaction catalyzed by catecholase oxidase.
The results obtained from the experiment for Km and Vmax for buffered medium using Michaelis-
Menten plot was 0.00091 M and 0.0041 Ms-1. The unbuffered medium recorded 0.00039 Ms-1 for
Vmax and 0.0001 M for Km. Lineweaver-Burk plot produces 0.0065 Ms-1 for Vmax and 0.0019 M Km
for buffered medium and 0.0049 Ms-1 for Vmax, and 0.0011 M for Km for unbuffered medium. The
